One-Pan Herb Goat Cheese Gnocchi with Asparagus and Tomatoes
This recipe is not groundbreaking or innovative, but it is so good. Plus it is incredibly easy. I had the idea to make this after serving a log of herby goat cheese with a charcuterie board for friends. We all loved the goat cheese so much, and I knew I had to incorporate it into a recipe. This vegetarian main is so simple, so delicious, full of explosive flavor, and comes together in under 30 minutes. It involves minimal chopping and dishes, which we all love and need during the week! Serves: 2-3
Ingredients:
1-4 oz. log of herb goat cheese (Boursin works as well)
1 lb gnocchi
12 oz cherry tomatoes
12 oz asparagus, sliced into 1-inch pieces
1 small shallot, roughly diced
2 cloves of garlic, roughly minced
3 tbsp extra virgin olive oil
1 tsp kosher salt
1/2 tsp freshly cracked black pepper
pinch of Aleppo pepper or red pepper flakes
drizzle of honey
chopped parsley for serving
Method:
Preheat your oven to 450°F.
In a 9x13 baking dish, add the goat cheese log to the middle of the dish. Spread the gnocchi, tomatoes, and asparagus evenly around the goat cheese. Sprinkle the shallots, garlic, olive oil, salt, pepper, red pepper flakes, and honey evenly over everything.
Bake for 20 minutes. Once it is out of the oven, stir everything together until the goat cheese emulsifies and the tomatoes burst.
Serve right away with chopped parsley and enjoy!
