Apricot Chicken Salad

Want to up your chicken salad game? Try this apricot chicken salad—full of savory and sweet flavors that will pack a punch for your tastebuds. I absolutely love chicken salad, and I really like apricots. The two work wonderfully together—and with celery for crunch, creamy mayo layered with seasonings, and dried apricots AND apricot preserves—this salad will be a new staple in your lunch rotation. Oh, and it uses a rotisserie chicken for added easiness. This recipe cannot get any more perfect! Serve it up with your favorite crackers, or on toast with some lettuce (as pictured). Serves: 4

Prep Time: 15 minutes

Ingredients:

  • 3 cups of shredded rotisserie chicken

  • 1 cup diced celery (from about 3-4 stalks)

  • 3/4 cup diced dried apricots

  • 3 tbsp apricot preserves

  • 3/4 cup mayo

  • 3/4 tsp kosher salt

  • 3/4 tsp freshly cracked black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp dried minced onion (or onion powder)

  • 1/2 tsp celery seed

  • splash of white wine vinegar

Method:

  1. Mix everything together in a large bowl. Taste and adjust seasonings as needed.

  2. Refrigerate in an airtight container for at least 30 minutes before serving so that the flavors can meld together. Enjoy!
