Marry Me Chicken Lasagna Soup
I’m back with another soup recipe, and this time we are transporting your kitchen to Tuscany. Marry Me Chicken was a viral recipe—and for good reason! It is full of cream, sun-dried tomatoes, parmesan, and juicy chicken. I wanted to add those comforting flavors (that some say has turned into countless marriages) and turn it into a soup. Lasagna soup was super viral recently too, so I thought it would be a great idea to combine the two together. There were zero recipes for this online, so I am very excited for you all to try this one-of-a-kind creation.

Serves: 4-6
Ingredients:
1 medium shallot, minced
4 cloves of garlic, minced
1/3 cup pitted green olives, roughly chopped
1 (7-8 oz) jar of sun-dried tomatoes in olive oil, drained except for 2 tbsp, and chopped finely
2 cups chopped cooked chicken breast (I use a rotisserie chicken)
2 quarts of low-sodium chicken broth
8 lasagna noodles, broken into smaller pieces (about 4-6 smaller pieces from each noodle)
1 tsp Italian seasoning
1 tsp kosher salt (like Diamond Crystal—adjust your salt depending on the brand)
1/2 tsp freshly cracked black pepper
1 cup heavy cream
3/4 cup freshly grated parmesan, plus more for serving
torn basil leaves and good olive oil for serving
Method:
Use 2 tbsp of the olive oil from your sun-dried tomato jar and place that in a Dutch oven over medium heat.
Add the minced shallots to the heated Dutch oven and sauté for 2 minutes. Add the minced garlic and sauté for 30 seconds to a minute or until fragrant.
Add the chopped olives and sun-dried tomatoes, and sauté for 1-2 minutes.
Add the chopped chicken and sauté for 1-2 minutes.
Add the broth, seasonings, and lasagna noodles. Stir to combine.
Bring the soup to a boil. Once boiling, reduce to medium-low, and simmer until the lasagna noodles are tender, about 8-12 minutes. Stir occasionally.
Reduce the heat to low. Add the cream and parmesan and stir to combine. Cook until the mixture is warmed through, about 3-5 minutes. Taste to adjust the seasonings.
Serve with fresh torn basil, more parmesan, and a drizzle of good olive oil. Enjoy!
