Pimento Cheese Heirloom Tomato Tartlets

Serves: 8

Ingredients:

  • 1 sheet of puff pastry (preferably an all butter pastry); thawed

  • 1 1/4 cup pimento cheese (I used this one)

  • 2 medium-sized heirloom tomatoes; each one sliced into 4 slices

  • Salt and Pepper

  • Olive Oil

  • Optional: thyme

Method:

  1. Preheat your oven to 425°F.

  2. Line a baking sheet with parchment paper.

  3. Lay your puff pastry out on your baking sheet. Slice it into 8 equal rectangles.

  4. Take a sharp knife and lightly score a 1/4 inch border around the edges of each tartlet. Poke holes inside the border of the tartlet with a fork.

  5. Evenly spread 2-3 tbsp of pimento cheese within the border of each tartlet.

  6. Place 1 tomato slice on top of the pimento cheese. Season each tomato with a little bit of salt and pepper. Drizzle on a little olive oil on top as well.

  7. Bake for 25 minutes or until the puff pastry is golden.

  8. Let cool for 10-15 minutes before serving. Optionally sprinkle each tartlet with a little bit of thyme. Serve and enjoy!
