Vegan Chocolate Chunk Banana Bread Muffins

They’re incredibly easy, extremely delectable, and they’re made with simple and wholesome ingredients that you probably already have in your pantry. Its all of the best parts about banana bread, but in a perfect little muffin.

Prep Time: 10 minutes | Cook Time: 15 minutes
Yield: about 12 muffins
Ingredients:
3 ripe bananas
1/4 cup white sugar
1/4 cup brown sugar
1/3 cup canola oil
1 tsp pure vanilla extract
1/4 cup applesauce
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp kosher salt
as many vegan chocolate chunks as you desire
Directions:
Preheat your oven to 350°F
In a large bowl, add the bananas and mash them until you reach a smooth consistency.
Add both sugars, the oil, vanilla, and applesauce into the bowl with the mashed bananas and mix together until well combined.
Sift the dry ingredients into the bowl with the wet ingredients, and mix until just combined. Do not over-mix.
Add in the chocolate chunks, and mix until just evenly dispersed.
Grease a 12-muffin muffin tin, and add a scoop of your batter into each space.
Bake for 15-20 minutes, or until a toothpick comes out clean.
