They have the craggy tops of soda bread, the buttery tanginess of a scone, and the tenderness and fluffiness of a muffin. These are absolutely phenomenal, and I am beyond happy with these, and I know you will be too!
Norwegian Salmon Cakes
Fish cakes are extremely popular in Norway, but they tend to use white fish instead of the incredible Norwegian salmon that they are known for. I decided to change that! These salmon cakes are loaded with dill, capers, and lemon juice and served with a briny cream cheese sauce to tie it all together. Do you like lox bagels? Then you will absolutely love these.
